Simply Made Sunday: Chewy Granola Bars

Homemade Chewy Granola Bars

very-very yummy!
2 1/2 C. whole oats
2 C. rice krispies
1 C. whole wheat flour
1 tsp. vanilla extract
1 tsp. baking soda
2/3 c. butter softened
1/2 c. honey
1/3 c. packed brown sugar
1 C. mini-semi sweet chocolate chips
(or peanut butter chips, or raisins, of nuts)
We think these are better than any store bought chewy granola bars than we have ever had---and they are sooooo much more healthy for you.
Mix the oats, rice krispies, whole wheat flour, brown sugar, baking soda and chocolate chips in a bowl.
While we do this, I have the butter softening in our mixer's mixing bowl.
It's a little tricky stirring these dry ingredients--especially if you are 4.Whip up the butter in the mixing bowl, add the dry ingredients and the vanilla and honey.
Mix at the slowest speed. I have stirred this by hand, but it is hard to do....it works just fine with the mixer on low.
Spray a 9x13 baking pan with non-stick spray. Kim and Luke were looking at each other at this point accusing each other of being "stinky". (they don't care for the smell of non-stick spray)
Press this into pan. I press it down quite firmly.
Bake at 325 degrees for 25 minutes--you want it to be a nice golden brown color.
Cool for 10 minutes after removing from the oven. Cut into bars, while still hot,
however, wait until completely cool before removing them from the pan.
These are very, very good!!
Plus, compared to store bought, they are a lot cheaper, especially when you have 12 people eating them!!
